Children’s Healthy Living Summer Institute (online)

Join this unique program to attain the knowledge and techniques to become leaders in promoting child health in the Pacific. The University of Hawaiʻi at Mānoaʻs Childrenʻs Healthy Living Summer Institute (CHL SI) will help you build the strategic and critical thinking skills to be a leader in the region and engage in an established, well connected program.

The CHL SI provides an academic course of study aimed at prevention of childhood obesity and the promotion of child health. Upon completion, students will have the skills to assess, monitor and deliver culturally appropriate and regionally relevant child obesity prevention-related programs in a globally relevant and locally applicable training. A certificate of completion is awarded to students who successfully complete the program.

The CHL SI is delivered fully online and in an on-demand, self-guided manner, allowing students to complete material at their own pace within specified time frames. This offers the greatest flexibility for students in the Pacific, a region that spans more than seven time zones and the international date line. Students participate in place-based curriculum, guided by instructors with extensive knowledge and partnerships with organizations that focus on child health. Summer Courses

CHL SI is offering eight courses completely online during summer 2019. Courses include the Science of Human Nutrition (Adapted for the Pacific), Lifespan Nutrition, Childhood Anthropometric and Dietary Assessment Field Techniques, Childhood Health and Nutrition Monitoring in the Pacific, Applied Professional Skills in Nutrition, Culture and Child Health in the Pacific, Foundations of Childhood Obesity Prevention in the Pacific, and Field Experience in Childhood Obesity Prevention.

FSHN 185 The Science of Human Nutrition (3 credits)
Summer 1 (May 20 – June 28, 2019)

Summer 2 (July 1–August 9, 2019)
Michelle Laguana
This course provides an introduction to nutrition, emphasizing nutrient requirements of healthy individuals, food sources, and functions of nutrients, with an integration of Pacific-focused, natural science concepts. This course will also fulfill the Diversification – Biological Sciences (DB) and the Hawaiʻi, Asia, Pacific Issues (HAP) general education requirements.

FSHN 455 Childhood Anthropometric and Dietary Assessment Field Techniques (1 credit)
Summer 1 (May 20–June 28, 2019)
Allison Calabrese
This course simulates hands on training in the techniques used to measure body composition and collect dietary intake information with a particular emphasis on children. Pre: B or better in 185; or consent.

FSHN 360 Applied Professional Skills in Nutrition (1 credit)
Summer 2 (July 1–August 9, 2019)
Solange Saxby
This course provides students with an opportunity to apply skills in technology, research, and career development. Students will become more familiar with identifying evidence-based information and demonstrating their academic skill sets for future professional success through the use of technology.

FSHN 370 Lifespan Nutrition (3 credits)
Summer 2 (July 1–August 9, 2019)
Dr. Marie Kainoa Fialkowski Revilla
Nutritional requirements and food needs during infancy, early childhood and adolescence, and aging. Pre: C or better in CHEM 161/161L, B or better in 185; or consent. Co-requisite: PHYL 142/142L, or consent. This course will fulfill the Diversification – Biological Sciences (DB) and Writing Intensive (WI) general education requirements.

FSHN 454 Foundations of Childhood Obesity Prevention in the Pacific (3 credits)
Summer 2 (July 1–August 9, 2019)
Dr. Jeannie Butel
A basic overview of the causes and effects of childhood obesity, evidence-based approaches, community-based research, and policies to prevent childhood obesity as it relates to the Pacific region. For Dietetic students, this course may substitute for the FSHN 488 Obesity, Science and Issues course. Pre: B or better in 185; or consent.

FSHN 456 Child Health and Nutrition Monitoring in the Pacific (1 credit)
Summer 2 (July 1–August 9, 2019)
Dr. Monica Esquivel
Explores the topics of current nutritional surveillance and monitoring systems, nutritional epidemiology and biostatistics, and the use of software for childhood health monitoring. Pre: B or better in 185; or consent.

FSHN 457 Culture and Child Health in the Pacific (3 credits)
Summer 2 (July 1–August 9, 2019)
Dr. Marie Kainoa Fialkowski Revilla
Introduces the health needs of the Native Hawaiian, Asian and Pacific Islander populations of Hawai‘i and the greater Pacific through a culturally-framed lens. After completion you will have the skills to be a culturally adaptive health practitioner. Pre: B or better in 185; or consent. This course fulfills the Hawaiʻi, Asia, Pacific Issues (HAP) and Writing Intensive (W) general education requirements.

FSHN 492 Field Experience in Childhood Obesity Prevention
Summer (May 20– August 9, 2019)
Dr. Cheryl Gibby
Integrates and applies the academic knowledge and critical skills students have gained through their coursework in a field experience setting to promote professional development. Pre: Senior standing in FSHN. This course will fulfill Writing Intensive (W) general education requirements.



Meet Your Instructors

JButel

Dr. Jeannie Butel is a Junior Researcher with the Childrenʻs Healthy Living (CHL) Center of Excellence at the University of Hawaiʻi at Mānoa. She has taught both the CHL seminar and the Introduction to Public Health courses. Her work focuses on building capacity, empowering people to take action, and connecting people to place so they can make positive changes in their community. Jeannie volunteers with community groups and likes to spend time outdoors.

ACalabrese

Allison Calabrese will be graduating from the University of Hawaiʻi at Mānoa with her Masters of Science in Nutritional Sciences in summer 2019 and is continuing on as a PhD student in the Nutrition Program. Allison is born and raised on the island of Oʻahu and is passionate about improving health disparities of Native Hawaiians. Allison is currently a graduate assistant at the university and has contributed to many innovative projects such as the creation of an Open Education Resource textbook that is currently being used in the FSHN 185 the Science of Human Nutrition course at the University of Hawaiʻi at Mānoa. In her free time, Allison enjoys outdoor activities like playing soccer, hiking, and paddle boarding.

MEsquivel

Dr. Monica Esquivel is an Assistant Professor and Dietetics Program Director at the University of Hawaiʻi at Mānoa. She teaches a number of courses for the program including Medical Nutrition Therapy and Human Nutrition. She works with local agencies in Hawaiʻi to support environmental and policy approaches to promoting healthy eating and physical activity for children. Dr. Esquivelʻs free time is spent outrigger canoe paddling or surfing at Pokai Bay on West Oʻahu.

JKai

Dr. Cheryl Gibby was born and raised in Hawaiʻi. She received her PhD in Nutrition from the University of Hawaiʻi at Mānoa in 2018. She has served as an instructor for FSHN 185 and co-authored the open education resource online textbook for the class. Dr. Gibby is also a professional musician and spends her time nurturing and running after her three young keiki.

MLaguana

Michelle (Shelly) Blas Laguana just completed her first year as a PhD student at the University of Hawaiʻi at Mānoa where she is majoring in Nutrition. Shelly is from the island of Guam. Her interest in nutrition and health sparked in high school after she took the required health education course in which her health teacher, Mrs. Damian, made learning fun and exciting! From there she continued at the University of Guam and completed her Bachelor’s degree in Consumer and Family Science with an emphasis in Nutrition and then further completed a MS in Nutrition Education from Rosalind Franklin University of Medicine and Science in North Chicago, IL. Shelly has been part of the University of Guam as an adjunct faculty teaching, with Cooperative Extension working with EFNEP and CHL, and as part of the Cancer Research Center collecting diet and lifestyle data on breast cancer survivors on Guam. Shelly aspires to finish her PhD degree and move back home and teach, inspiring others just as her health teacher inspired her. When she is not busy with school she enjoys exploring the beauty of Oʻahu with her husband Ron.

CPanizza

Chloe Panizza is a Dietitian and she received a Masters in Health Promotion from Curtin University, Perth, Western Australia. Currently she is completing her PhD in Nutrition at the University of Hawaiʻi at Mānoa. Chloe has worked extensively as a bariatric dietitian in private practice and developed and delivered preventative community health programs in Australia. Her research focus is on nutrition policy and assessing dietary patterns and index based scoring systems. Chloe holds a research assistantship from the Nutrition Support Shared Resource at the University of Hawaiʻi Cancer Center. As part of her assistantship activities, she has played a significant role in an intervention study using the mobile food record. To relax, Chloe enjoys running, beach walks and long boarding.

MKFRevilla

Dr. Marie Kainoa Fialkowski Revilla is a kanaka ōʻiwi Assistant Professor in Human Nutrition and a Registered Dietitian Nutritionist at the University of Hawaiʻi at Mānoa. She specializes in nutritional assessment and delivering nutrition education for the Pacific. Dr. Revilla has taught a number of online nutrition courses since 2013 at the University of Hawaiʻi at Mānoa. Dr. Revilla resides in Ahuimanu on the windward side of Oʻahu, Hawaiʻi and enjoys spending time with her ohana, running and working in the yard.

SSaxby

Solange Saxby is working on her doctorate in Nutritional Sciences at the University of Hawaiʻi at Mānoa. She is from Singapore and grew up loving to eat the multicultural foods available at the local hawker stalls. Solange has been a teaching assistant for undergraduate courses and loves helping students learn science material in a fun manner. Her research focuses on using taro as a prebiotic to improve the human gut microbiome health. On her free time, Solange enjoys running, surfing, and hiking.
